Three Sisters Stew

This vegan recipe was inspired by Native American traditions, and will delight friends and family any time of the year.
Serving size: 12 servings
|1 tbsp.||Olive or vegetable oil|
|1||Small onion, chopped|
|14 oz.||White beans, drained|
|14.5 oz.||Red or pinto beans|
|14.5 oz.||Corn, drained|
|2 cups||Cubed butternut squash|
|1 cup||Vegetable stock|
|2 tsp.||Bell's Seasoning|
|Salt to taste|
- Heat oil in large saucepan and cook onions over medium-high heat until tender.
- Stir in remaining ingredients and bring to a boil.
- Reduce heat and simmer 5 minutes.
- To use this as a meal starter, you can add any cooked protein – ground chicken/turkey/beef, steak tips, meatballs, shrimp, etc.
