Three Sisters Stew

This vegan recipe was inspired by Native American traditions, and will delight friends and family any time of the year.
Ingredients
Serving size: 12 servings
1 tbsp. | Olive or vegetable oil |
1 | Small onion, chopped |
14 oz. | White beans, drained |
14.5 oz. | Red or pinto beans |
14.5 oz. | Corn, drained |
2 cups | Cubed butternut squash |
1 cup | Vegetable stock |
2 tsp. | Bell's Seasoning |
Salt to taste |
Directions
- Heat oil in large saucepan and cook onions over medium-high heat until tender.
- Stir in remaining ingredients and bring to a boil.
- Reduce heat and simmer 5 minutes.
- To use this as a meal starter, you can add any cooked protein – ground chicken/turkey/beef, steak tips, meatballs, shrimp, etc.
