Three Sisters Stew

This vegan recipe was inspired by Native American traditions, and will delight friends and family any time of the year.

Ingredients

Serving size: 12 servings

1 tbsp. Olive or vegetable oil
1 Small onion, chopped
14 oz. White beans, drained
14.5 oz. Red or pinto beans
14.5 oz. Corn, drained
2 cups Cubed butternut squash
1 cup Vegetable stock
2 tsp. Bell's Seasoning
Salt to taste

Directions

  1. Heat oil in large saucepan and cook onions over medium-high heat until tender.
  2. Stir in remaining ingredients and bring to a boil.
  3. Reduce heat and simmer 5 minutes.
  4. To use this as a meal starter, you can add any cooked protein – ground chicken/turkey/beef, steak tips, meatballs, shrimp, etc.
